Realistically, we're not all homesteaders that have multiple days of free time to gut our houses, so start small! Work on organizing one cupboard at a time and come back to another later. Don't overwhelm yourself trying to Marie Kondo all your possessions — all it takes is 20 minutes at a time to make the space around you (and thus, your headspace) feel a little less shiddy.
